Bug Description
This is a simple bug, a real papercut.
Actually : In the default Installation of Ubuntu, Libreoffice have an integrated button in the toolbar to send current document via e-mail. But if you click it, it doesn't work : e-mail software isn't set. We have to manually open Libreoffice, go in tools > Options > Internet E-mail and set "thunderbird" as e-mail software.
Should be : On the default Ubuntu installation (since Oneiric), Thunderbird is the default mail software. So it should be used like that in Libreoffice. The libreoffice default mail software should be set to "thunderbird" by default, or even better (but maybe more difficult) to the default mail software in the system.

This is no longer valid, that bug was fixed at some point in the past 7 (!) years.
The "Tools > Options > Internet > E-mail" field is unset (blank) by default, and this makes LibreOffice call xdg-email, which figures out the default e-mail client as expected.
