I am on Windows XP and tested it. I have something like that.
When setting the equirectangular projection to 360 degrees and change to architectural the picture disappears. Not Hugin.
When press fit under the projection tab of the fast preview it comes back with the real FOV

I got a spurious crash in a similar situation, switching between Architectural and Equirectangular forth and back.

The crash is not reproducible with 2018.0.
