Discord already packages debs themselves using links that automatically redirect to the latest versions. There are 3 separate branches of Discord that are available. The Stable branch is the main release, PTB is basically the beta release, and Canary is pretty much an alpha release. The differences between the three branches are usually just features that Discord is testing out; they very rarely push versions on any branch that completely break the client. The couple of times that this has happened in the past, it was rectified very quickly.

As far as I know, these packages will work on any version of Ubuntu as long as their dependencies are available there. I have only tested them on 16.04 myself, and all of the dependencies are available in 16.04.
