Docs: Replace screenshots in "Circulating Items" chapter

The "Circulating Items" documentation chapter contains some screenshots that need to be replaced. Some show an older version of the web client menu which is hard to read when selected (because of white text on gray background). One is zoomed in much more than necessary and should be resized. And one has had new features added (Evergreen 2.12 added "In-House Use" to detail view).

It looks like item_status_altview_web_client.png at least should be updated again for 3.2+, given the "Copy" => "Item" relabeling.
