While I'm against keeping each log that Envy makes, I'd be willing to keep 2 logs:
1) envy-installer.log
2) envy-installer.log.old
It would work in the following way:
Every time you run Envy the envy-installer.log is overwritten, however the old log is renamed as envy-installer.log.old. In this way you'll be able to see both your current and your previous log, as the Xorg does (Xorg.0.log, Xorg.0.log.old).
