Sending email via PHP only gives wrong email address as sender

Something about the PHP setup seems to force us into having all emails appear as being from:

<email address hidden>

Am I supposed to use an SMTP? Does the regular 'mail' method not work?

It was working fine previously and I have not messed with it - I will look
into tonite - I'm off to a meeting now.

(Dreamhost is my webhost BTW).
