penguin is not mounting /var/log from bambi at boot.
It does mount after boot:
sudo mount -a
If it can happen to penguin it can happen to parrot
My stratigy would be to grep through the logs look at the nfs utils
(nfsstat) --especially on bambi, look at what is different betweeen
parrot and penguin in /etc/network /etc/fstab and bambi:/etc/exports
