docs: support matrix unreadable in PDF

Bug Description

The generated PDF version of the docs contains a completely unreadable support matrix.

Fixing this may require hacking https://opendev.org/openstack/sphinx-feature-classification/src/branch/master/sphinx_feature_classification/support_matrix.py so that the "summary" table can output a sphinx ".. only:: html" directive, with substitute text telling the reader to go look at the table online in a ".. only:: latex" section.
