No example overlay for vault-kv to use Encryption-at-Rest

Bug Description

There are some examples for Vault to be used as a PKI[1], but no example for Vault to be used with vault-kv interface to have a secret store with Encryption-at-Rest. Would be nice to have it to be linked from the Encryption-at-Rest document[2].

The docs for using Encryption at Rest [1] do include a reference to such an overlay [2], although it is not replicated inline on the page. I suppose the link-only has caused confusion here, so it would be worth going ahead and inlining the overlay as well.

Not sure how I missed it, but the overlay is already inlined as well as linked, so there's nothing to do here.
