As per https://www.haproxy.com/blog/haproxy-exposes-a-prometheus-metrics-endpoint/, since haproxy 2.0 it can be compiled with prometheus support.
The ubuntu packages in focal and jammy have prometheus support enabled.

Would be nice to add a monitoring_prometheus (or similar) config to enable the /metrics endpoint alongside the regular stats.

Also, would be interesting to add prometheus:scrape relation support
