... so it's impossible to choose Chrome or Chromium as a default browser in a Settings | Preferred Application dialog.

AFAIK, if you set chromium as default browser when it asks for that, it will create an helper (.local/ share/xfce4/ helpers/ chromium. desktop) automatically and set it as default handler.
