Maybe this bug is fixed in latest SuperTuxKart release - 0.7.2 ?
I've packaged latest version of STK (0.7.2), see official Baltix GNU/Linux and SuperTuxKart team repositories - ppa:baltix-members and ppa:stk/dev :
https://launchpad.net/~stk/+archive/dev and https://launchpad.net/~stk/+archive/daily

There are lots of bugfixes, performance improvements and nice features comparing to old 0.7 version, which is packaged in Ubuntu 11.10 (Oneiric), see bug #871630 for more info.
