A good scenario from OS X (sorry but that's what I'm more familiar with in terms of app-centric interface with a dock AND a menu bar): Photoshop.

On widescreens I often keep the dock on the left side to maximize vertical space but when I work with an interface that aligns icons at the left screen edge like Photoshop I move the dock to the bottom.

Why not hide and take advantage of the clever trigger delay? because I need to switch to the filemanager, lightroom and so on all the time, drag and drop files, keep an eye on some tasks running in the background (downloads, IM, irc whatever) and, because I can: I prefer running Photoshop on my large desktop monitor... Why should I hide useful information that slows down my workflow?
