Bug Description
Binary package hint: evolution
evolution 2.30.3 in Maverick doesn't use the font selected in the system configuration and doesn't seem to have an option for changing the application font itself.
my standard-font is Ubuntu and all programs use that font, but not evolution.

Not sure which fonts you refer to as the report is vague.
Does Edit > Preferences > Mail Preferences > General > Message Fonts fix this problem?
