there isn't a field for date on the collections

the point is that date should be used for sorting the collections and the collections from newest (top) to the oldest (bottom).

note, this is different from the sorting of the images in a collection.

Does the date need to be manually entered by the site admin or is it just a timestamp applied when the collection is created?

Just set upon creation on Date.

Ok, collection_date field added to collection & datetime auto-inserted each time a collection is created.
