IMHO it is mandatory to have product category available
* for filters
* for grouping

especially in production envirenment nobody wants to mix raw materials with finished products

Wouldn't it be sufficient to have a (stored) related field

'categ_id': fields.related('product_id','categ_id' )

in stock.move and in report_stock_move

and not touch sale.py and purchase.py ?

Yes this looks good,
please also add
* category to extended filters

and everything to Reporting (even more important)
* Moves Analysis
* Inventory Analysis

and a "qty is not 0" filter button - which by default is pressed

1. There should be in the Moves Analysis : the real stock, virtual stock, physical stock and its UoM, UoS of each product. How to do that?
2. the incoming and outgoing amount sometime is not equal with the in and out in warehouse>product>product.product.tree
