This problem has been ongoing since Dapper and possibly even back to Breezy and earlier (I just now got around to reporting it).

Yes, I have most of ubuntu-desktop, xubuntu-desktop and kubuntu-desktop installed.
Initially Xubuntu was installed (and I had it's Usplash). Then Kubuntu was installed right afterwards (and I had it's Usplash).
But when Ubuntu was installed (again, right after Kubuntu) I was still left with the Kubuntu Usplash theme despite having installed the Ubuntu Usplash theme.
In the past when I had this problem I'd try to remove both the Xubuntu and/or Kubuntu Usplash themes only to end up with a corrupt Usplash installation that resulted in not allowing me to boot (X/K)Ubuntu at all.
I tought about trying that again, but I think not. ;-)
You'll note from what I copied and pasted above that the default does indeed show Ubuntu, but when I boot I wind up with Kubuntu. That's particularly odd considering that the System default is Xubuntu. It appears as if somehow something is "sticking" when it comes to that symlink.

Unfortunately, this is expected behaviour. After changing the symlink
you will need to regenerate the initramfs with this command:
sudo update-initramfs -u
