There should be a comma before until

Initially, Unix was entirely command line-based[,] until graphical user interfaces (GUIs) began to emerge in the early 1990s.

I would drop "initially", along with both commas:

"Unix was entirely command line-based until graphical user interfaces
(GUI's) began to emerge in the early 1990's."
