I wish it would be possible to customize the format of the song change notification like the normal Song Info.

I suggest adding an option for showing/hidding album art. Also, it would be nice to be able to select which string appears on which line. For example, you set up three lines with Title, Artist, Album aligned vertically; or Artist, Title, Year, etc. I think the first line should always be in bold. Take a look at the banshee 1.6 notifications.
