Did you press Enter in the field once you changed the name?

Could you run the following test :
- Open a terminal
- gvfs-monitor-file /var/lib/bluetooth/xx:xx:xx:xx:xx:xx/config (where xx:xx:xx:xx:xx:xx is the address of the adapter)
- perform the change.

Normally it should appears some event in the terminal.

Changed in gnome-bluetooth (Ubuntu):
importance: Undecided → Low
status: New → Incomplete

I have the same problem. To make matters worse, my bluetooth mouse (Microsoft IntelliMouse Explorer for Bluetooth) only works when my computer is discoverable.

Changing the name and clicking ok gives me the following with gvfs-monitor-file:
File Monitor Event:
File = /var/lib/bluetooth/00:50:F2:EA:73:54/config
Event = CHANGES_DONE_HINT
