This sounds similar to Bug #352927, except that mine recovered (i.e., I didn't have to restart).

I've posted a new version of the -nvidia driver to our xorg-edgers PPA,
would you mind testing it either on Jaunty or Karmic and see if it
resolves this bug?

Sorry I haven't updated in a while. I continued to have strange things happening. The screen would freeze but there were no error messages. The system started rebooting itself hourly, but there were no cron jobs set. Other computers that my lab bought at the same time had similar problems, but they had different configurations. We chose to remove the video cards: MSI NX8500GT-TD256E (on one video card all the capacitors had "blown"). We've started using the VGA port on the motherboard and ceased to use the NVIDIA drivers.
