I currently use mimetex which seems similar. Are there any advantages of this program over mimetex which is already included in Ubuntu?

the mimetex site announces:

Announcement: If latex is installed on your server then see mathTeX , the successor to mimeTeX. It's based on real LaTeX and renders higher quality images than mimeTeX. If latex is not available on your server, continue using mimeTeX.

so i think featuring mathtex offers a real advantage and is not just duplicate work.

Someone already has started working on a Debian package for mathtex. See http://bugs.debian.org/509626.
