Which version of ubuntu are you running? And could you attach the /var/log/Xorg.0.log and /etc/X11/xorg.conf files here? Thanks.

I'm having this trouble too with Ubuntu 8.10 Intrepid Ibex Beta. This recognition problem existed also in Hardy, but there was "displayconfigure-gtk" to fix it with. Unluckily Intrepid doesn't have it anymore. I've been able to fix the display with xrandr, but that not ergonomic at all. The problem is the same with Kubuntu 8.10 Beta.

My monitor is 20-inch Trinitron CRT:
EIZO Flexscan T662-T
H: 30 -85 kHZ, V: 55 - 160 Hz
Recommended Resolution 1280x1024

In my opinion the recognition is one problem, but worse is that there is no simple tool available to fix the problem in case the monitor is not detected.
