Systems on them will not be added to the GRUB boot configuration.
Check GRUB_DISABLE_OS_PROBER documentation entry.

It seems the / file system is damaged, lots o f Error messages I can't translate but that seem like file system damage.

Yeah so /var/lib/dpkg/info is missing most .list files and /usr/share/grub is missing files too, so I'm going to suggest figuring out how you lost those files and then reinstalling Ubuntu
