The error in your logs is:

mount: /var/lib/grub/esp: special device /, does not exist.
dpkg: error processing package shim-signed (--configure):
 installed shim-signed package post-installation script subprocess returned error exit status 32

Please run dpkg-reconfigure grub-common to tell grub (and thus shim) where your EFI System Partition is. Without this information being correct in the debconf database, shim cannot install an updated bootloader.
