The resolutions supported by your monitor can be displayed with the shell command edid-decode, e.g.
edid-decode /sys/class/ drm/card0- eDP-1/edid
The actual sub-path of /sys/class/drm/ depends on the connection to the monitor that you chose.
You should see the same resolutions as those stated in the Xrandr.txt that you supplied.
The default for Ubuntu with Gnome is to use Wayland and non Xorg. What is the output of
echo $XDG_SESSION_TYPE?
Are you able to change the resolution with the xrandr command in the shell?
