Bug Description
Docs at:

for 21.04 seem incomplete or incorrect.
See attached screenshot.
A fresh minimal install was done.
vino was installed using apt in terminal.
vm was rebooted.
screen sharing is not showing up as docs indicate.

That does not sound as a docs bug to me, but it's the functionality you are wondering about. So closing this bug.

So maybe the proper first step for you is to try to make use of gnome-remote-
