Please try to run application in debug mode, and attach the logs:

 $ simple-scan -d

Please try to build the latest version according to instruction:

  https://gitlab.gnome.org/GNOME/simple-scan/-/blob/master/README.md#building-from-source

and check if the issue is existing in latest version.

Could you please try to compress /home/corrado/.cache/simple-scan directory and attach it to bug report?

Generally you have two scanner backends:
* "escl:http://127.0.0.1:60001" vendor="HP" model="DeskJet 2600 series [665032] (USB 1)"
* "hpaio:/usb/DeskJet_2600_series?serial=CN0569B27006PS" vendor="Hewlett-Packard" model="DeskJet_2600_series"

The first is not working correctly.
Could you please describe and attach the screenshot of issue that you cannot change scanner backend?

The second option for the scanner appears also in Ubuntu 20.04 after running hp-doctor and so simple scan works also on Ubuntu 20.04.
BEFORE running hp-doctor I see the attached screenshot where if I click on the small arrow near 'HP Deskjet..' I DO NOT SEE the second option.

simple-scan works fine; printer was connected and power-on during installation.

On a different new install on same PC from the same ISO with the printer NOT connected at installation I had to run hp-doctor to solve the problem.

This is a widely reported "bug" that is fixed (for many/all) by installing two packages:

sane-airscan
and
ipp-usb

These need to be included in all standard distros so that scanning will work out-of-the-box.
