I try to use VNC with gnome-remote-desktop but they do not appear in settings

gnome-remote-desktop isn't in main and gnome-shell isn't built with it in Ubuntu, see bug #1802614 which might have to do with the issue

Thanks for the bug report. It seems we already have bug 1730612 requesting this feature where it would be implemented. So this is a duplicate of bug 1730612.
