Switch to default Ubuntu plymouth theme

Bug Description
With the recent upgrades of plymouth in Ubuntu 20.04 the old Ubuntu GNOME plymouth theme is a bit flaky on some systems.
I am going to switch the vanilla-
new installs will get the Ubuntu theme.
upgrades will retain the Ubuntu GNOME theme but if it doesnt work on your system or you want the default one, you can remove the packages plymouth-
