Please provide the output of vlc -vvv (e.g, pipe it to some file so that the data is recorded even when the screen freezes). Also an xorg.log and the syslog might be helpful.

Please also try if disabling hardware acceleration "fixes" the issue.

Also I tried running vlc -vvv and played a video it worked fine up until I switched to full screen, then my whole screen displayed a horizontal lines of colors.

Okay, so this looks like a bug in the nouveau driver to me. Did you also try the proprietary nvidia driver?
