Bug Description
I selected CentOS as the default deployment operating system in the Settings. That means that only the flavor of CentOS is provided as an option (aside from the OS), but not the kernel. In Ubuntu, however, we can select the version of Ubuntu plus the available kernels.
That said, when CentOS was the default, I tried to deploy Ubuntu and select a kernel, but only when CentOS is the default OS, changing to Ubuntu as a selection doesn't provide me with a selection for the kernel (see screenshot)
That said, when I changed the default deployment OS to Ubuntu, that changed and allowed me to select the kernel.

I believe the disappearing kernel field when switching between ubuntu > centos > ubuntu was fixed as part of the ux improvements of this section. It doesn't appear to be happening anymore.
As for the kernel field appearing when choosing centos, there are no kernels in the data for centos which is why.
