Docs: Work Log chapter needs rewriting

Thanks for this re-write, Lynn! It looks good. I went ahead and pushed it to master and rel_3_4, along with a quick follow up commit that fixed a link.

For your next pull request, could you please link to the branch, rather than specific commit? For example: https://git.evergreen-ils.org/?p=working/Evergreen.git;a=shortlog;h=refs/heads/user/lfloyd/LP1767278_Docs_Work_log

Or you can just include the name of your branch (user/lfloyd/LP1767278_Docs_Work_log). This makes it easier for committers to see all the commits that you made as part of this work at a glance.
