containerized-undercloud: create install/upgrade logs by default

Bug Description

Before with instack-undercloud we used to have ~/.instack/install-undercloud.log.

It would be great to have the same feature so our users can loop at the log files out of the box, without having to use commands like tee, etc.

Reason: After discussion with Alex Schultz, this looks like a bigger project.

I'm going to take a new approach capturing output from the subcommand in undercloud.py in a new change, then revisit the bigger logging picture.

I think the most logical would be to re-use the --log-file param for both install and upgrade logs.
Then users will have less places to look for errors, less CLI/config options for logging, and less changes to SOS-report tooling as well. Seems like a win-win for all.
