Hi Nick,

From your log:

/var/lib/dpkg/info/libapache2-mod-wsgi.postinst: 2: /etc/apache2/envvars: User: not found
dpkg: error processing package libapache2-mod-wsgi (--configure):
This file (envvars) is of apache2.
You could check if there are modifications with:
$ dpkg --verify apache2

If you have modifications please take them back and add them one by one to find which one is breaking you.
If you have no modifications to that file then I don't have a good idea from the logs so far what it could be.
