from your log:
modified.conffile..etc.postfix.post-install: [deleted]
modified.conffile..etc.postfix.postfix-files: [deleted]
modified.conffile..etc.postfix.postfix-script: [deleted]

I was able to reproduce by deleting those files.
So you need to decide to either remove postfix if you don#t want it e.g.

$ apt purge postfix

Or to reinstall the missing conffiles, for the latter see [1].
