Bug Description

When trying to install to an EFI system, partman-efi should have a check.d script to make sure there is an EFI system partition rather than just letting grub-install crash later.

Well, the real problem is the fact that instead of warning me beforehand, it blows up in my face at the very end.

Your disk is currently partitioned to boot in bios mode, but you booted the installer in EFI mode. A warning message prompted you that this could be a problem and recommended performing a bios mode install instead, but you chose not to. You either need to perform the bios mode install, or partition the disk using GPT and set up an EFI system partition to install in EFI mode. This will be done for you if you choose the "use entire disk" guided install option.

The custom mode is for experienced users. And experienced users should know the basics about booting an OS and partitioning.

No apt-ghetto, partman has a number of scripts that try to keep users from making simple mistakes. This particular one is missing or defective ( I seem to recall seeing one in there for this but apparently it isn't working ).
