Hi, I don't understand the issue. Please, could you explain all steps?
Thanks in advance!

Ok
Installed GUFW
Go to Log tab and see real-time log lines
Clicked on Remove Log => after this no log items show up in the Log Tab

Could you run gufw from shell? Just:
$ gufw
And paste in paste.ubuntu.com the dump?
Thanks!

When I run 'gufw' I see the UI dialog comes up.
Is it correct ?

yes, but if there is any issue, try the error and after reproduce it, close
the UI.
You should see a dump in the shell.

If you have enabled Gufw Log in Preferences, yes ;)

Oh yes, I do!

I actually see lines like

[10/27/2016 02:20:53 PM] ufw Logging: Full
[10/27/2016 01:32:47 PM] Gufw Log: Removed

when changing log level, but nothing else :(

I need the dump in the shell, not the log ;) and you changed the ufw
Logging, not the Gufw Logging.

As I said I see no dump.
Maybe there are other ways to troubleshoot?

Hi, I think is an issue in your system. No more users reported something like this. If there is not a dump, I can't do anything. I'm sorry.
Best regards.
