Copying from the laptop to USB takes an incredibly long time due to speeds ~500 kbps for a USB3.0 flashdrive and 3.0 compatible port on my laptop.

Can you post the output of lsusb -v so we can check if your system thinks you have a USB 3.0 controller and USB 3.0 flashdrive, or whether it thinks one or both of them is USB 2.0?
Also, if you've upgraded from Ubuntu 14.04.4 LTS to a newer version please let us know. Finally, can you please (re)post the output of uname -srm
