Default text edit doesn't fully replace Scratch

Bug Description
Install some text editor other than Scratch. Go into Applications in the system settings. Change the text editor to your new editor. Logically, it should take immediate effect. But it doesn't, at least not completely. You can reboot and even then, some text files will still use Scratch. It seems to be an annoying problem that every single file extension needs to be individually associated with the new editor. In other words it seems as though this setting just affects ".txt" and not ".cpp" or ".sh" or something like that.

I can confirm this issue. The combo box for text editor affects the following mimetypes: "application/xml"
"text/plain"
"text/xml"
It does not affect mimetypes like:
"text/x-vala" x-shellscript"
"application/
etc
There might be a question here if we should add a new combobox for editing code files since I think this is probably a different use case from editing plain or rich text files.
