Auparavant, j'avais tenté d'installer différentes version de Gramps, sans succès.

It appears that you previously had a version installed that was taken from the gramps website, and not a version from Ubuntu.
If you remove python3-gramps and then install gramps again, it should work (don't worry, your data will be safe).
That is:
$ sudo apt-get remove python3-gramps
$ sudo apt-get install gramps
There should probably be a Breaks/Replace added to the next version of Gramps to prevent this in the future.
