Binary package hint: gnome-terminal
Open a new terminal, notice title 'Terminal'.
Enter 'sudo su', notice title changes to 'root@.....'
Enter 'exit', notice title doesn't change back from 'root@....'

Terminal only sets the title as directed by the shell. The root shell probably has a configuration parameter in PROMPT_COMMAND to set this. If your standard user account does not, it will not tell gnome-terminal to change it back. Look at /root/.bashrc for a line with "PROMPT_COMMAND". A similar line in your user .bashrc will allow gnome-terminal to display a proper line as well (or you can remove it from root and avoid it ever changing from "Terminal").
