default based apps on extensions

Bug Description

Defining apps as default should be handled more precisely.
I might use Scratch for .txt files but not for .html files.
Similar to Windows well-known extensions should be shown as a list where you can select the default application.

A custom option would make sense for some things, and possibly adding some additonal catagories for things that don't fit in the existing ones.

As the preferences are for choosing generic applications, it wouldn't make much sense to place this under "Default applications".

Choosing you text editor does make a sweeping choice for all extensions that it relates to, the more specific (per-file-extension) preferences can be set using the Files "Open In" options.
