There has to be a way to add proxy authentication details for the proxy.

To work around this, I need to manually edit the /etc/environment and /etc/apt/apt.conf to add the proxy username and password for the selected proxy.

The bad part is that every time I remove the proxy from the network gui, I need to add the username and the password again in the above two files.
