Dear Christopher, thank you very much for you reply! I beg pardon for responding so late - I could not try your suggestion until now.
I updated the BIOS: now - from what I could see - LibreOffice seems not freezing the system anymore, but 'simply' crash Compiz.

Giving in a terminal the command
sudo dmidecode -s bios-version && sudo dmidecode -s bios-release-date

I obtained the following output:
220
06/23/2010

Trying to play around with LibreOffice options, I could however observe that my problem seems related to the use of the sidebar: after deactivating the latter, crashes and freezes seems to be disappeared... Well, until now.
From what I could see, I'm induced to think the bug is actually related to Compiz - likely, to its management ot the Nvidia graphic card.

Hotteterre, thank you for updating your BIOS. Could you please test for this with the latest development release of Ubuntu? ISO images are available from http://cdimage.ubuntu.com/daily-live/current/ .

If it remains an issue, could you please run the following command in the development release from a Terminal (Applications->Accessories->Terminal), as it will automatically gather and attach updated debug information to this report:

apport-collect -p xorg REPLACE-WITH-BUG-NUMBER

Thank you for your understanding.

I had no time to make the test yet, but I am now able to circustantiate the issue: crash and freezes only occur when LibreOffice is started opening a precedently created document! Starting from a new document - or from the LibreOffice loader - and then opening the existent file, all works flawlessy.

Hotteterre, what crashes specifically? Just the LibreOffice program, you get auto-logged out, etc.?

No, Compiz crashes: the window lose decorations, Unity sidebar disappears... LibreOffice and the other running programs continue to work. I've to restart Unity from the command line.
