Junk filter deletes mails which are not junk

If I create subfolders in the inbox the mails are checked for junk at different points in time again and again. The mails that reside in these folders are not supposed to be junk (many of them explicitly marked as "not junk"). But the filter deletes all of them after 14 days (default in the junk filter settings) and interpretes them as junk. Why is that? This rule is definitely wrong. The junk filter should not filter read mails - only unread, new mails.
Now I lost all my mails that are older than 14 days (i.e. 2007-06-14 or something).
They are no longer in the trash. How can I restore them?

Either you change the rule, the default setting or you warn, that all mails in the inbox are always checked for junk and are always regarded as junk after 14 days.

If I mark a mail as "junk" or as "not junk" the button should change. Look at Mac Mail. They have solved the problem in an elegant way. For example: After clicking the button "Not junk" the mail should return where it comes from (usually the inbox) and the button should change to "Is junk", so that you can switch back if you made a mistake.

Or have I overseen something?
