Bug Description

Ubuntu 12.04.2 precise

Steps:
1. Plug the HDMI cable to the laptop, and open the Sound Settings
2. Switch the output device form built-in speakers to HDMI output
3. Close the Sound Settings and play sound, make sure it's coming from the HDMI device
4. Unplug the HDMI cable, play sound again.

Expected Results:
It should be played through the built-in speaker on the laptop.

Actual Results:
Nothing happened, and if you open the Sound Settings, the HDMI device is removed from the devices list, but still can be seen in the "Setting for Speakers" part on the right-hand-side (please find attachment for screen shot)
You have select the internal speaker manually to make it back to normal.

Status changed to 'Confirmed' because the bug affects multiple users.

Changed in gnome-control-center (Ubuntu):
status: New → Confirmed

The behavior is the same in Ubuntu 13.04. I'm sure this bug affects more than just 2 people but I can't find a master bug report for this.

The automatic switching between HDMI audio and internal speaker was removed purposefully in Ubuntu 12.04.
Here is the explanation why:
http://web.archive.org/web/20121014092420/http://voices.canonical.com/david.henningsson/2012/04/14/audio-over-hdmi-and-displayport-in-ubuntu-12-04/

However this bug is still valid since the Sound Settings should not display HDMI audio settings for the internal speakers once the HDMI cable is removed. The title should be changed though.

summary: - Sound Output won't be automatically change to existing devices after
- unplug HDMI cable
+ Sound Settings is showing HDMI audio settings for internal speakers
+ after HDMI cable is removed

sadly there still seems no solution for this bug.
But I found a workaround. start

pavucontrol

via terminal and switch in the first tab the output device to Internal Audio.
Worked for me.

Still seeing this on 16.04 LTS as well -- the sound settings menu does not clean up HDMI sound sources that have been removed.
