I've just installed Gaupol to edit some subtitles and it seems that the French translation of the app is missing.

Confirmed, but it lacks a whole lot of languages. Here is the upstream comment on translation:

I'm not a translator but if they used Launchpad or some similar service for this part of the work the job would be done much faster.
