Ability to change delimiter via config

Bug Description

This is a feature request to be able to set the delimiter to something other than '.' (dot). Ideally being able to define this in a config file would be nice.

Sflow & HBASE all want to send in data with dots.
But that breaks graphite.... :(

Everything in Graphite (whisper, carbon, ceres, the webapp, all the Javascript in Composer and Dashboard) makes the assumption that the separator is a dot. It would be a significant undertaking to try and find all the references and subtle assumptions about dots everywhere and change it to use an arbitrary delimiter. It would be much easier to write a daemon that sits in between your collector and alters the string before it gets to Graphite or, if your tool supports it, an output plugin specifically for Graphite that will change dots to underscores and send Graphite friendly metrics to Carbon.
That being said, I'm not closing this out or marking it 'Won't Fix'. If some enterprising developer does all the leg work and gets it working, we would (after considerable testing) most likely accept a patch for this.
