Joaquin: I was curious, and looked into this for you. Indeed, you are correct; there is presently no way to close an application via Multi-Touch gestures using the out of the box configuration.
I managed to ask John Lea about this; at the moment Unity if focused for desktops with some kind of pointer (in addition to any touch features), so closing is left so that it can be doing with the mouse/touchpad.
On a separate tack, I suspect, that in the long run, Quit/Close is hopefully not something that you need to actively do; the higher-level layers of the operating system and applications perhaps can manage themselves. But that's a research exercise for another day:
